Roasted Red Pepper Pizza

Ingredients

1 pita breads, Greek style 45 g
50 g ground beef, lean, cooked
green peppers, diced 16 g
onions, diced 20 g
20 g brie cheese, diced
1/4 bocconcini / fresh mozzarella, grated 12 g
1 eggs size large [optional]

Method

Pizza
  1. Preheat oven to 350° F. Place pita on baking sheet and spread roasted red pepper sauce on pita. Top with beef, green peppers, onion and cheeses. Bake for 10 minutes or until cheese has melted and pizza is heated through.
  2. For an awesome breakfast meal after adding the green peppers and onion, crack an egg in the center of the pizza before topping with cheese. Broil until egg is cooked and cheese is melted.
Roasted Red Pepper Sauce
  1. Roast pepper in broiler or on barbeque until skin turns black. Let pepper cool and then peel off skin and discard. Puree peppers, garlic, black pepper and olive oil in a food processor until smooth.
